Description

Two Pennsylvania Department of Agriculture funded positions are available in the laboratory of Dr. Darrell Cockburn. The successful candidates will investigate starch degrading enzymatic potential of alternative, gluten-free grains for use in the brewing industry. The candidates will gain experience with malting grains and testing the malts for enzymatic activity and optimal pH and temperature profiles for the enzymes. Mashing programs will be developed for optimized production of fermentable sugars, which will be analyzed by HPLC. Applicants must be an active undergraduate student, with experience in food science. The position is set to begin May 13, 2019 and proceed until August 16, 2019. The position will pay $10.00/hour.
